Crepe pan vs pancake pan

Technically, a crepe pan is a pan with a wide, flat surface and very shallow lip. It has a handle so that you can pour the batter into the centre and easily swirl it around to cover the entire base and form a thin crepe. A pancake pan is often interchangeable with a frypan or griddle which are both suitable for making and flipping pancakes. However, you can certainly use your crepe pan to also make pancakes, as well as blinis, eggs and much more.

Seasoning your new cast iron crepe pan

Cast iron and carbon steel are fantastic materials to use for a crepe pan as they are oven-safe, provide even heat distribution and can be used on any cooking surface, including gas, electric and induction cooktops, as well as open campfires. If you are using an unseasoned crepe pan rather than pre-seasoned or enameled cast iron, you'll need to season it before using to create a non-stick coating.

Start by scrubbing your new crepe pan in warm, soapy water. Dry thoroughly and apply a thin layer of vegetable oil to the inside and outside of the pan. Place it in an oven set to 180-200° Celsius and leave the pan to bake for around 1hr. Once cool, store it away in a dry place.
