Inspired by the legendary Seki swordsmiths, Yaxell has been employing traditional Japanese knife making techniques since 1932. Featuring a unique blade shape, the Yaxell Mon Nakiri Knife 18cm is perfect for slicing, dicing, mincing and chopping vegetables, fruits or herbs. The knife's blade has a VG10 super stainless steel core for added strength while the wood-like handle is made of Canvas-Micarta, which is water-resistant, hygienic and lasts decades.
Key Features:
- Classic Japanese-style vegetable cleaver that features a unique blade shape perfect for slicing, dicing, mincing and chopping vegetables, fruit or herbs.
- Blade has a VG10 super stainless steel core, which is clad with high quality stainless steel from both sides and the sword wave line is clearly observed on the blade.
- Yaxell blades are heated in a very hot kiln then tempered in high temperature, a heat treatment technique which makes the blades strong and durable with a hardness rating of 61 degrees on the Rockwell scale.
- The wood-like black handle is made of FDA-approved Canvas-Micarta, an odourless and highly durable material of linen and resin, that is water-resistant, hygienic, and lasts decades.
- The end of the handle is made of stainless steel and is completed with two stainless steel rivets, which gives the knife outstanding stability.
- Crafted in the heart of Seki, the Japanese capital for sword-making for over 700 years.

Hand wash with lukewarm water and mild detergent then wipe to dry thoroughly. Store in a well-ventilated place preferably in a knife block, knife case or on a knife strip. Maintain by honing with a sharpening rod or grinding with the Yaxell 2 Stage Sharpener. |
