How to section a whole chicken

  1. Position the chicken on a large chopping board with the drumsticks and breast facing upwards
  2. Firstly, remove the legs (keeping the drumstick and thigh attached) by cutting between the drumstick joint and the breast, and then flipping the whole chicken to slice between the thigh and the backbone to remove the leg in one piece.
  3. Seperate the thigh and drumstick by making a slice and cutting between the two joints.
  4. Repeat the process on the other leg.
  5. Next, keep the chicken with the back facing upwards, take hold of the wing, and cut between the joint and the backbone to remove it.
  6. Repeat the process on the other wing.
  7. Flip the chicken back over so that the breast is facing upwards.
  8. Slice along the centre of the chicken to remove one of the breasts.
  9. Repeat the process on the other breast.
  10. You will have eight pieces of chicken when you’re finished.
  11. Save and freeze the remaining backbone and winglets to make homemade chicken stock.
