Ingredients

Baked Brie with Honey

  • 200g ripe brie

  • 1 tbsp honey, to drizzle

  • Crostini, to serve

Roasted Red Grapes

  • 1 bunch of red grapes

  • Olive oil spray

Salt and Pepper Pastry Sticks

  • 1 sheet puff pastry

  • 1 tbsp butter, melted

  • Salt and pepper, to season

  • 1-2 tbsp parmesan cheese, grated

  • Chilli flakes, to taste

  • Dried herbs, to season

Roasted Maple-Coated Nuts

  • 1 cup raw nuts, unsalted (pistachios, pecans or cashews work well)

  • 2 tsp maple syrup

  • ½ tsp light olive oil, sunflower oil or peanut oil

  • ¼ tsp vanilla extract

  • ¼ tsp ground cinnamon

  • Pinch of salt

  • 1-2 fresh rosemary sprigs

Crostini with Ricotta, Peach and Thyme

  • 1 crusty bread stick, sliced

  • 2-3 peaches, cut into 6-8 wedges (depending on the size)

  • 1 tbsp of olive oil

  • 2 tbsp of honey

  • 250g tub of ricotta

  • 2 tbsp balsamic glaze, to serve

  • Fresh thyme or basil, to serve

Method

Baked Brie with Honey

  1. Preheat the air fryer to 180C.
  2. Remove the plastic from the brie and place it back in its box.
  3. Bake in the air fryer for 6 minutes.
  4. Drizzle with honey or your favourite fruit relish.
  5. Serve with crostini.

Roasted Red Grapes

  1. Preheat the air fryer to 180C. 2.Rinse and dry grapes.
  2. Spray lightly with olive oil.
  3. Roast in the air fryer for 5-7 minutes.

Salt and Pepper Pastry Sticks

  1. Preheat the air fryer to 180C.
  2. Remove a puff pastry sheet from the freezer and thaw slightly.
  3. Brush with melted butter then season with salt and pepper.
  4. Sprinkle the pastry sheet with parmesan, chilli flakes and dried herbs.
  5. Run a rolling pin over the pastry sheet so the ingredients stick to the pastry.
  6. Cut the pastry into long 1cm-wide strips then cut each strip in half.
  7. Gently roll each strip of pastry with your hands so they form long strips.
  8. Cook in the air fryer for 8 minutes, turning once at 4 minutes.

Roasted Maple-Coated Nuts

  1. Preheat the air fryer to 180°C.
  2. Place 1 cup of your favourite unsalted raw nuts in a bowl.
  3. Add the maple syrup, oil, vanilla extract, cinnamon and salt, then use your hands to coat the nuts. Cook in the air fryer for 5 minutes.
  4. Shake the basket, add some fresh rosemary and cook for 3 minutes.
  5. Place on a tray to cool.

Crostini with Ricotta, Peach and Thyme

  1. Preheat the air fryer to 180C.
  2. Drizzle the bread slices and peach wedges with olive oil.
  3. Place in the air fryer and cook for 3 minutes on each side.
  4. Drizzle the honey over the ricotta and spread on the crostini.
  5. Garnish with a wedge of roasted peach and a drizzle of balsamic glaze.
  6. Add some fresh thyme or basil to serve.
