How does a fermentation crock work?
The fermentation process relies on cutting off the oxygen to food so that it can slowly break down in a saline solution. These steps summarise the process:

A saltwater or vinegar solution is poured in
The food is submerged beneath the liquid
Weights are placed on top to keep the food pressed down and submerged

How do you know when fermentation is done?
