Being a Japanese knife fan, purchasing a German Wusthof Classic Ikon chefâ€™s knife was going to be a risk for me.
No fear..... what a great knife. Fits well into my hand, well balanced, very very sharp, cuts with ease and feels quality. My only reservation about this knife is itâ€™s weight. Compared to my Kasumi, this Wusthof is heavy. It took a little time to get use to the weight. Japanese knives are light and well balanced.
Beware...this knife (like all quality knives) needs special looking after. No dishwasher for cleaning, no chopping bones or frozen food, itâ€™s hand washing and drying.
A real bonus with this knife is that Wusthof offers free lifetime sharpening.
