Japanese in origin, the name of the Santoku knife loosely translates as "three uses" those being slicing, dicing and mincing. The Granton edge (characterised by the shallow oval indentations along the blade's side) reduces friction and suction so you can work more speedily and efficiently.
Wusthof knives are seamlessly forged from single piece of X50CrMoVa15 surgical stainless steel, before the blade is double ground to a 20 degree angle as part of a 38-step process. The handles are triple-riveted and each knife is thoroughly inspected at every stage. Lifetime Warranty

Best knife I've ever owned. I use it for everything. Its sharp and a great shape for cutting so many things. If you could only have one knife this would be it.
