Not doing much pastry myself, I bought two of these knives, one for people who come to my place for communal dining and bring cakes, and another as a potential gift to one of these folk. They're amazingly sharp, and can be a bit dangerous.
First of all, amazingly sharp: it does an amazing job of slicing a tomato, and probably will be great for cutting up tough-skinned veggies like pumpkin, eggplant, melon, etc. As for pastry, it'll be a 'piece of cake'.
Dangerous: it has no bolster (smooth, protective part between the handle and the blade), so it's easy to catch a bit of finger on the rear of the blade: I've nicked myself several times already.
I'm looking forward to seeing how it works on pastry, but already don't regret buying it at all: amazingly sharp instrument.
