How does a fermentation crock work?

The fermentation process relies on cutting off the oxygen to food so that it can slowly break down in a saline solution. These steps summarise the process:

  1. Veggies are placed into the crock whole or shredded

  2. A saltwater or vinegar solution is poured in

  3. The food is submerged beneath the liquid

  4. Weights are placed on top to keep the food pressed down and submerged

  5. A lid prevents air from getting in and prevents mould from growing

  6. Lactic acid breaks down the food over time

  7. After a few days or weeks, the food has been fermented and is ready to enjoy!

How do you know when fermentation is done?

When it comes to kimchi and sauerkraut, the best way is to taste it. The food should taste sour, not like salted cabbage and bubbles are a very good sign. With kombucha, the drink should taste tart with just a hint of sweetness. Kombucha is fermented in 2 stages with stage 1 lasting 6-10 days and stage 2 lasting 3-10 days for carbonation.
