From cast iron pots to cast iron pans, cast iron cookware is no longer the domain of professional chefs - plenty of home cooks are embracing the beauty and benefits of cooking with cast iron, too. Whether you've got your heart set on one cast iron pan or an entire cookware set, consider these factors before buying to ensure you choose one that is right for your cooking needs:

  1. Type. Do you need a cast iron skillet, a griddle, grill pan, wok, crepe pan or something else?

  2. Size. Cast iron pans come in many sizes, from small 10cm ones for cooking a single egg to large 35cm ones for cooking a hearty family breakfast.

  3. Handle. Are you more comfortable holding a long handle or a short one? Most cast iron pans will have helper handles to assist with lifting and carrying them safely.

  4. Finish. You can either buy enamelled cast iron that doesn't need seasoning or classic cast iron that will need to be seasoned after each wash.

Tips when using your new cast iron pan

If you're new to using cast iron skillets, check out these tips to make sure you're getting the most out of your new cookware:

  1. Wash it with soap when it is brand new. Soap is not generally recommended when washing cast iron, however, you should use it before cooking with it the first time.

  2. Raw cast iron skillets will need to be seasoned properly before you can use it, unless they come pre-seasoned or are enamelled.

  3. Unless using enamelled cast iron, avoid cooking with acidic food, such as tomatoes, until your pan has built up a proper seasoning layer.

  4. Cast iron is porous, so never let it soak in water.

  5. Heat your pan up slowly on a moderate heat setting to avoid hot spots.

Why cast iron skillets have spouts

Most cast iron round pans will have a pour spout which makes it easier to pour liquids out of the pan while cooking. This is particularly useful if you are cooking meat that has released plenty of hot fat and you want to remove it without making a mess.

Seasoning your cast iron pan before you use

If your cast iron pan comes pre-seasoned, it's ready to use right out of the box. You will still need to oil it after each wash. If you have purchased an enamelled cast iron pan, you don't need to season it at all as the enamel coating provides a non-stick surface. However, if your pan is raw cast iron, it will need to be seasoned prior to cooking with it.

You can do this by first scrubbing it in hot water. Dry it well. Use some paper towels to rub a small amount of vegetable oil over the entire pan and buff it in well. Turn the oven on to 180-200° Celsius and bake the pan for 1hr, before allowing it to dry completely before using. The non-stick layer will continue to build each time you cook with oil and after each wash.

How to clean and take care of your new pan

Your cast iron pan needs to be cleaned after each use. Use a stiff brush and some hot water to scrub it well. Rinse and dry it thoroughly. Then, apply a thin layer of oil over the entire skillet and remove the excess. Heat the oven to between 180-200° Celsius and place the pan inside to bake for around 1hr. Take it out and let it cool completely before storing it away in a dry area.
